Raw, minced beef is marinated in spicy chili powder, then mixed with clarified butter and a honey-colored medley of spices known as berbere, to form Kitfo. One of Ethiopia's most traditional dishes, it is often consumed with the flat bread injera.
A thin haze cloaks the Ethiopian highlands as radiant plateaus rise in swaths of sienna, copper, and dusty green. Like a desert mirage, this unrivaled terrain, marked by the slopes of the Entoto Mountains, emerges. Thousands of species of birds mingle with the rare wildlife of the African savannah in an extraordinary sub-Saharan oasis. This enchanting landscape, over three thousand meters above sea level, surrounds the third highest capital city on Earth, Addis Ababa. Amharic for "new flower," the city was founded just over a century ago, but the graciousness of the population, the intricacies of their customs, and the emblematic nuances of this intriguing civilization, invoke a land suffused with the wisdom of a strident past.
